"Boil Up", a hearty meat and vegetable soup.

You got to learn how to do this recipe because you can feed a lot of people from just one large pot.

I have used bacon bones (lots of flavour and salt) but you can also use pork bones or brisket bones. My little secret is to add Star Anise to the water before adding the meat. This flavours the water with Aniseed.
Make some "doughboys" and cook for 10 minutes before serving in soup bowl. Let it cool down for 10-15 minutes before consuming. It is very hot straight from the pot.
Have some nice crusty bread to mop up all the wonderful liquid.

“Boil up”

A Maori favourite. This is a hearty meat and vege soup with dumplings.

Equipment
Large pot (per 4 students)
Chopping board and sharp knife
Peelers
Wooden spoon
Measuring cup/spoons
Mixing bowl

Ingredients
Bacon bones/pork bones/brisket bones
Star anise
Kumara/potato/carrots
Watercress/spinach/cabbage/silverbeet
Doughboys (dumplings)
Crusty bread (french stick)

Method
1.    Bring a third of a pot of water to the boil.
2.    Place 1 star anise in the water for 3 minutes and then remove.
3.    Add the bacon bones and bring to the boil. Cook for 20 minutes.
4.    Peel the kumara/potato/carrots, cut into large chunks and add to the pot.
5.    Bring to the boil. Cook for 20 minutes.
6.    Wash and slice up the green vegetables, add to the pot.
7.    Bring to the boil.
8.    Turn down heat and simmer for 15 minutes.
9.    Make the doughboys and add 10 minutes before serving.
10. Serve in a soup bowl with crusty bread.

“Doughboys”
Ingredients
2 cups flour
2 tsp baking powder
A good pinch of salt/herbs
1 cup of milk

Method
1.    Sieve flour into a bowl.
2.    Add the baking powder
3.    Add the salt and herbs
4.    Slowly add the milk and mix to make a dough.
5.    Roll into golf ball size balls.
6.    Place on top of the liquid in the pot and cook for 10 minutes.

Beef Burgers and Oven fries.

Who needs to go to McD's/KFC etc, when you can make your own burger and fries!
This recipe is easy and quick.
We parboil (cook for 5 min in boiling water) the potatoes to speed up the cooking process, then finish in the oven with oil and seasoning.
You can add a variety of seasoning/sauces to the patties to flavour them up before frying to brown and cooking through in the oven.

Beef Burgers and Oven fries.

Equipment
·      Chopping board and sharp knife
·      Small pot
·      Sieve
·      Small fry pan
·      Mixing bowl
·      Whisk
·      Measuring cups/spoons
·      Oven dish
·      Fish slice
·      Peeler

Ingredients
·      2-3 potatoes
·      Beef mince, 1 ramekin
·      Onion, 1/2, finely chopped
·      Breadcrumbs, ¼ cup
·      Egg, 1/2, beaten (1 egg per table)
·      Seasonings (salt, pepper, herbs)
·      Buns, 2 per pair
·      Cheese slices, 2
·      Oil for frying

Method
1.    Wash, peel and wash the potatoes. Slice into wedges or chips.
2.    Bring to the boil for 5 minutes in a small pot with salted water and allow to dry out in the sieve..
3.    Arrange on the oven dish, oil and season. Bake for 30-40 minutes.
4.    Add mince, onions, breadcrumbs, beaten egg and seasonings all into a bowl and mix together.
5.    Divide the mince into 2 even amounts and flatten into patties.
6.    Heat up an oiled fry pan and fry the patties until they are brown on either side.
7.    Place on the oven dish and finish cooking in an oven.
8.    Cut the buns in half then add the burger patties and other fillings.

9.    Make presentable and serve.

Lemon Coconut slice.

A simple and delicious dessert.
But beware of how much sugar is in it.
Sugar makes you crazy (and rots your teeth, makes you fat and gives you type 2 diabetes!).

Lemon Coconut Slice
Equipment
·      Round Slice tin with baking paper
·      Measuring cups/spoons
·      Mixing bowls
·      Wooden spoon
·      Sieve
·      Cooling rack
·      Zester or grater (1 per table)
·      Juicer (1 per table)
Ingredients
·      Butter, 50g, melted
·      Castor sugar, ½ cup
·      Egg, 1, beaten
·      Lemon rind, 1 tsp (1/2 a lemon)
·      Flour, ½ cup
·      Baking powder, ½ tsp
·      Coconut, 1/4 cup
Lemon Glace Icing
·      Icing sugar, ½ cup
·      Lemon juice, 1 Tbsp
·      Coconut, 1 Tbsp
Method
1.    Preheat the oven to 1750C.
2.    Grease and line slice tin with baking paper.
3.    Mix together the melted butter and sugar, then the egg and lemon rind.
4.    Sieve in the flour and baking powder, then mix in the coconut.
5.    Spread the mix into the slice tin and pack down.
6.    Bake for 25 minutes in the middle of the oven. It should have risen, be spongy and light brown in colour. Remove from the oven and allow to cool on rack.
7.    Make the icing by sieving the icing sugar and pouring in the lemon juice and mixing well until spreadable. Add a little hot water if too dry.
8.    Carefully spread the icing on the cooled slice.
9.    Sprinkle the coconut over the icing.
10. Cut into squares/slices and serve.

Lasagne.

What kid doesn't like Lasagne?
Not many, if any!
Serve with a salad to make it a complete meal.

Lasagne
Equipment
·      Pot and lid
·      Sieve
·      Sharp knife and chopping board
·      Small fry pan
·      Measuring cups/spoons
·      Oven dish
·      Mixing bowl
Ingredients
·      Lasagna pasta, 2 cup
·      Salt, a pinch
·      Beef mince, 1 ramekin
·      Onion, ½ sliced
·      Garlic, 1-2 cloves, crushed and chopped
·      Tomato puree, 2 tsp in ½ cup water
·      Oil, a small squirt
·      Seasonings (salt/pepper)
·      Butter, 25g
·      Flour, 2 Tbsp
·      Milk. 1 cup
·      Cheese, 3 Tbsp
·      Herbs, pinch
·      Breadcrumbs, 1/3 cup
Method
1.    Preheat oven to 1750C.
2.    Bring a pot ¾ full of water to the boil. Lid on.
3.    Add a pinch of salt.
4.    Add the pasta, stir and bring back to the boil.
5.    Boil, uncovered for 15 minutes or until pasta “al dente”. Drain through sieve and leave in mixing bowl.
6.    Heat up the fry pan with a little oil (medium heat).
7.    Add the onion and fry until soft.
8.    Add the mince, garlic and seasonings and cook through (5-10 minutes). Add tomato puree with water. Leave to reduce on low heat.
9.    Place the butter in the pot and melt.
10.  Add the flour and cook for 2 minutes until frothy.
11. Take off the heat and add the milk, stirring all the time. Return to heat.
12. When the sauce is thick, add the cheese and herbs. Mix through and remove from the heat.
13. Layer the pasta, meat and sauce in the oven dish.
14. Sprinkle the breadcrumbs over the top and bake for 15 minutes.
